Hold up…how can this dish be vegan if it has cream sauce?


Not to worry, this cream sauce is purely vegan and made with avocado…no trace of dairy whatsoever!


I’ve been playing around with making cream sauce out of avocados for a while now, using others’ recipes and tweaking them to my liking.


I think I’ve finally found the perfect combo of ingredients, and now I can’t stop making this sauce. It’s like a very healthy addiction for me!


I’ve used this sauce on top of spaghetti squash many times, but one night I was just in the mood for something different. So I opened my fridge and a light bulb went off…


Zucchini and mushroom “pasta” topped with “cream” sauce!


Here is my most recent vegan pasta invention, which I am totally in love with and crave often.


You’ll need:


For the “pasta”


·      3-4 large green zucchini squash

·      mushrooms of any kind, sliced (about 1 cup)

·      1 tbsp coconut oil

·      Himalayan sea salt and pepper to taste


For the sauce


·      1.5 ripe avocado flesh

·      1-2 tbsp fresh lemon juice

·      1-2 tbsp extra virgin olive oil

·      1-2 cloves of garlic (depending on taste)

·      small handful fresh basil leaves

·      2 tbsp raw pine nuts (I use Trader Joe’s pine nuts for the best value)

·      Himalayan sea salt and pepper to taste


How to:


1.     Cut zucchini into thin noodle-like strips using impeccable knife skills (haha!), OR get yourself a “zoodler” and make yourself some zucchini “noodles.”

2.     Add coconut oil to a pan and warm on low heat to melt.

3.     Place zucchini “noodles” on the pan and cook on low to medium heat, stirring around often. Heat these until the zucchini is soft and “noodle-like” in texture (See #4 below once zucchini is halfway done).

4.     When the zucchini is about half way done, add the mushrooms and continue cooking, stirring around often until zucchini and mushrooms are moist and tender.


While the “pasta” is cooking…


5.     Place all sauce ingredients into a food processor and process until thoroughly blended into a creamy consistency.

6.     Once the pasta is done cooking, plate it and top with as much cream sauce as you desire.

7.     Bon appetite!

Super easy, super delicious, and most definitely a staple in our house!
